The Costa Vida leadership team works hard to help our franchise owners succeed

Sean F.D. Collins

Chairman of the Board
A successful entrepreneur with over 25 years of retail and consumer goods operating experience, Sean holds integrity paramount in business relationships. His drive for growth and remarkable creative vision propelled Sean to start his first business at 23. He saw the excellent potential in Costa Vida right from the start; in 2004, he and now-President and CEO Dave Rutter became the first franchisees and acquired the Costa Vida brand from the founders five years later. Sean brings his growth-oriented, entrepreneurial spirit to help expand the Costa Vida brand and accelerate its nationwide expansion.

Dave Rutter

President and CEO
With more than 30 years of foodservice and hospitality experience, Dave provides disciplined operations knowledge to Costa Vida. Dave started his career managing operations within Prestwich Farms. He was introduced to Costa Vida in 2004 where he and Sean Collins, current Chairman of the Board, became the first franchisees. They later acquired the Costa Vida brand in 2009. Dave now serves as President and CEO and brings to Costa Vida a strong operational background and the ability to deliver solid financials.

Jeff Jacobson

Chief Operating Officer
With over 35 years of experience in the hospitality and foodservice industry, Jeff was named Costa Vida’s Chief Operating Officer in November 2009. Prior to his career with Costa Vida, Jeff served as Director of Operations of Rumbi Island Grill and was a Regional Vice President for CKE Restaurants, which includes the brands Hardee’s and Carl’s Jr.



Kip Prestwich

Director of Operations
Kip has been with Costa Vida since 2003, where he began working in the first restaurant as a line cook. He advanced quickly within the franchisee organization to oversee four locations. Kip then became a District Manager in 2008 for the company stores and was named Director of Operations for Costa Vida in 2012. Kip oversees Costa Vida’s Franchise Business Consultants and is the District Manager of our company locations.


Terry Jennings

Director of Development
Working in the restaurant industry for more than 30 years, Terry is an expert in domestic and international restaurant development. He introduced McDonald’s into the Mexican market, helped McDonald’s form development relationships with Wal-Mart, Exxon, Chevron and Amoco, and he assisted in corporate initiatives in marketing, supply chain, design and quality management. Most recently, Terry was responsible for strategic development at Five Guys Burgers & Fries in Canada, opening the chain’s first international location followed by another 40 international locations.

Bonnie Elhalta

Director of Operations Support
Bonnie joined Costa Vida as the Director of Training and People Development in 2012. She has spent her career working with companies such as Jamba Juice, Peet’s Coffee and Tea, Pinkberry, Bajio and Freebirds World Burrito. Her superior people skills help her develop and roll out top-of-the-line training programs for franchisees and their employees.

Marc Beynon

Director of Training

Marc Beynon - Director of TrainingMr. Beynon started with Costa Vida back in June of 2005. He has served as a General Manager until he was promoted to a Franchise Business Consultant in Jan of 2012. He served in that capacity until again being promoted to becoming a Director. He now serves as the Director of Training. Over his tenure with Costa Vida he has helped open 28 locations and has directly worked with over 18 Franchise Partners. For 25 years, Marc has been married to his wife, Shauna and have four children. In his spare time, Marc loves to golf, watch movies, eat and when opportunity permits, scuba dive.

Geoff Alter

Executive Chef
Geoff started his career in cooking, gaining chef experience at Zuni Café, Campton Place Restaurant, The Presidio GC and Sir Frances Drake Hotel. He later gained valuable experience as a direct sales manager, regional sales manager and resident food aficionado for Sysco Intermountain. His culinary background coupled with his distribution experience has made Geoff a valuable asset to Costa Vida from R&D to Supply Chain Management to Quality, Health and Safety. Geoff has been Costa Vida’s Executive Chef since October 2012, and his extensive experience has helped him craft Costa Vida’s delicious and nutritious menu by sourcing from only the best farms around the world.

Blair Johns

Director of Construction
Blair joined Costa Vida as the Director of Construction and Design in 2013. Prior to joining the team, he was building stores across the U.S. and Canada with Five Guys Burgers & Fries and Franklin Covey. His market knowledge and territory expertise helps him select the very best sites for all Costa Vida locations.
